It all started when...
As a true Virginian, my love of food started at home in Warrenton, Virginia. Loving the area in which I grew up and growing to appreciate all its land had to offer led to the beginning of my appreciation for viniculture, aquaculture and agriculture.
I traveled extensively in my young adulthood which introduced me to many cultures and I found the food inspiring, interesting and intriguing. In 2003, I decided to pursue my passion for cooking. I packed my bags and headed for New York City, where I attended The French Culinary Institute (now The International Culinary Center) in Lower Manhattan. I immersed myself in my studies and volunteer opportunities and had the honor of studying under the legendary Deans; Jacques Pèpin, Alain Sailac, Andre Soltner and Alice Waters. I learned the true meaning of discipline, quality, and the methods behind French and Farm to Table culinary traditions.
Immediately following my graduation from FCI, I staged with Alain Ducasse at the Essex House while working with Serena Bass Catering. Having built an extensive work experience through multiple opportunities in NYC, I returned to the South. I moved home to Virginia where I gained even more culinary experience.
My innate business savvy, culinary aptitude and can-do attitude have guided me to the position that I held as the General Manager and Executive Chef of the Kenmore Inn, located in historic Fredericksburg, Virginia. This is where my niche was uncovered- creating menus and pairing wines is truly my calling. I learned a lot from my seven years there, honing my skills as a chef and learning all the background aspects of running a business. By the summer of 2017 it was time for me open my own restaurant. With support from my family, friends, the community and my colleagues, I opened The Confident Rabbit in September of 2017 on William Street in Fredericksburg, Virginia.
Sometimes in life, you wake up and realize what you are meant to do, and I was meant to do this… to cook clean, local, simple food and pair it with the perfect wine.
My husband Andy and I reside in Fredericksburg with our dog Jackson.
